Holiday Sugar Cookies with Essential Oils

Can you have a holiday season without sugar cookies? They are just kind of a staple around this time of year. I have a fun recipe for plant based sugar cookies that I'd love to share.

Holiday Sugar Cookies with Essential Oil

1 1/2 cups organic powdered sugar (I like to make my own using coconut sugar refined to a powder in the blender)

1/2 cup almond milk

1/2 cup softened coconut butter

1 tsp vanilla

2 drops essential oil (make sure yours has nutrition facts on the label) Some ideas to try: Peppermint, Cinnamon Bark, Lemon, Ginger, Wild Orange, etc.

1 tsp cream of tartar

1 tsp baking soda

2 tbsp corn starch

2 1/2 cups flour

1/8 tsp salt

Mix together sugar, almond milk, coconut butter, vanilla, and essential oil. Blend well. Combine cream of tartar, baking soda, corn starch, flour, and salt. Add to oil and sugar mixture until a dough forms. Refrigerate for 2 hours. 

Heat oven to 375 degrees. Let dough warm a little till pliable. Roll and cut shapes. Bake for 7-8 minutes and cool.

Frosting

2 cups powdered sugar

2 tbsp almond milk

2 drops essential oil

Combine until smooth and frost your cookies. Let dry to harden the frosting. Yum!
